A few comments:

1) Off-site suggestion: Kennedy Space Center.

2) Traveler from the UK can do what I do, but in reverse. If you have an old, deactivated GSM phone lying around, you can get a pre-paid SIM for use while stateside. US carriers providing GSM service include AT&T and T-Mobile. Verizon Wireless uses CDMA so the chances of you having a CDMA-capable radio in a phone lying around is somewhere between extremely unlikely and impossible. [What I do on my frequent trips across the pond is buy a pre-paid SIM for my old, deactivated, 3G iPhone while there.]

We tried surprising our kids who had been to WDW at least a dozen times, at the time....we packed everything at night when they were asleep over a few nights. We thought we did a great job. When it came time to wake them up at 4 AM so we could leave....they were happy but they had figured something was up over the last few days, so they weren't really surprised.
