According to Wikipedia and other sources:

Summit Plummet is 120 feet tall.
Tower of Terror is 199 feet tall (Len said on a previous podcast that, if a building was over 200 feet tall, it needed navigation lights for aircraft).
Expedition Everest is 199.5 feet tall.
Characters in Flight goes up to 400 feet above Downtown Disney (http://disneyworld.disney.go.com/dest...in-flight/)

Disney has already removed some cycling stuff.

Lance Armstrong's last "victory" in the Tour de France was in 2005.

Disney closed the Wonders of Life, with the Wonder Cycles, at the end of 2006.

When it comes to the highest place a guest can be in WDW, if Expedition Everest and Characters in Flight count as options, then I suggest parasailing on Bay Lake. I did that a couple of years ago when I was there, and we were up 600 feet. I was able to look out, and down, on everything. I don't think anything lets you go higher than that.

I think the highest point that is reached by an attraction rider in the theme parks is the front seat of the Expedition Everest ride car. The next highest point reached (not counting the second row, etc. of EE) is the back row of the Tower of Terror elevator car.
